As the world turns its eye to Paris for the French Open, Baseline and Tennis.com partnered with Sinclair stations to get us in the mood for Roland Garros. Both sites will showcase a French food recipe from eight of the top French restaurants from around the country. Bon Appétit!

Chef Johnny Nunn from Verdigris joined KATU Portland to create the Croque Madame. It's a fancy grilled ham and cheese (with egg) made of dry-aged salt-cured ham, gruyère cheese and mornay sauce.

Preheat oven to 350 degrees Fahrenheit.

Lay brioche on a clean, dry work surface. Place ham on 4 pieces and gruyère on other 4. Melt butter in a nonstick pan over medium-high heat. When butter is sizzling and just starting to brown, lay bread in pan with meat and cheese sides up, then place in oven for 4 minutes, or until cheese is melted and bread is toasted and crispy like a grilled cheese. (If you don’t have a pan large enough to hold all pieces, toast them in batches and place in oven on a buttered cookie sheet and bake all together.)

Meanwhile, in another nonstick pan melt butter over low heat. Gently add cracked eggs to pan one by one and cook until whites are firm and no longer translucent. Sprinkle with salt and pepper.

After sandwiches are toasted, flip ham side on top of cheese side and place a fried egg on top. Carefully put each sandwich on a large plate and, with a large spoon, drizzle Mornay sauce around yolk, covering only whites. Garnish with chopped herbs and pepper and serve.
